Thought I'd open up the topic to include other driving sims as well as the king of console racers.
GT is, and has been, one of my favorite games for a long time. The combination of TV-like graphics (for the time each game was released,) hundreds of cars (600 in GT4,) and wonderful (if somewhat imperfect) physics engines. As a result, I find it difficult to play other sorts of games, particularly button-mashers.
You see, GT always took finesse to master. Granted, the races were easier than the license tests, but the game was, and still is, very challenging to get right. I remember playing a demo version and getting frustrated, but after some practice at braking and turning, I got pretty good.
It really is something else.

For me, the Need for speed series is my favorite. I hate how it doesn't have more than 40 cars in each game, but you need to think hard throughout the game (money choices, type of car, performence).
I wish it was as good as Grand Turismo, but runnin' from the increasingly challenging police is a nice bonus.

I'm quite a fan of GT, mainly GT Concept 2002 Tokyo-Geneva. Where else can you race around in Nissan Micras and Ford Kas? It has graphics that can stand up to newer games.
I like NFS as well, but only the Car modding possibilities in the game.
I also like the Colin Mcrae games, but would personally like them even more if they included a Land Rover!

You see, I really dont' consider NFS much of a driving sim, rather, more of an Arcade-type racer. I'm talking stuff like the aforementioned McRae, RFactor, GT Legends, etc.
I believe GT4 also has the Ka and Micra, as well as a bunch of other cars spanning almost all eras, including the 1890s!

There's no question in my mind that Gran Turismo and it's successors have been almost unbeaten in the past ten years. Gran Turismo was my first PSOne game and I loved it from the start. The game blew me away and the series continues to wow with every iteration. Even the much delayed and much hyped Gran Turismo PSP was wonderful. Compared to most PSP games, it looks spectacular. I still like the series, but I've since gone onto other racing franchises.
The Need for Speed series has suffered from an "identity crisis" in the past few years. Every game in the series seems to take a different direction. 'Carbon', 'Most Wanted' and 'Undercover' seemed to take an action movie, street racing approach while 'Underground' 1 and 2 have simple gone for the street racing vib, perhaps to cash in on the Fast and Furious film series.
'Shift' has taken the same idea from GRID and has gone for an "official racing league" sorta persona. And you know what? It actually works. Shift, is actually the better racer of the series as it breaks away from everything else before it and . It's decent but not perfect The main problem with 'Shift' and all the other games in the series is the handling physics. The cars are either too skiddish to control or too exaggerated. It always leaves a bad taste in my mouth.
Other series that are amazing is the Race Driver and TOCA Touring Car series, the Forza Motorsport series and the Colin McRae rally series of games. Many of the newer iterations have taken dramatic steps to keep the series fresh. With 'Race Driver: GRID', the game is set out like a global racing league comprised of European touring car and Le Mans based series, American muscle car and drifting series and Japanese drifting and mountain based Touge events.
For 'Colin McRae: DiRT 2', the game has more of an extreme sports X-Games element to it, featuring X-Games like tournaments, trailblazer, Rally Raid and rallycross events. While rallying is not as heavily featured as in it's predecessor, it is still an awesome game and one certainly befitting the Colin McRae moniker. I'm sure he would have loved it.

*Blows off dust* I enjoy playing Forza but I often sleep on new releases since unlike other games all the titles are pretty similar. That was until I got Forza 5 last week. Man, it’s amazing, The graphics are phenomenal and despite this people saying the Handling is too easy, I like it better than the old games, i think it’s about the same skill required, just smoother and more responsive. The only thing I disliked is how many events and stuff it shoves in your face every time you play. I prefer games that go slowly and let you take on the different things to do at your own pace. 9/10 would recommend.
